The new bistro perched on the roof of Valerie’s Lafayette Paris Haussman, with a refreshing and cool vision, still by chef Julian Sebbag.

A Declaration of Love for the Parisian Bistro

After 5 wonderful years of creating vegetarian dishes at Créatures, the wind is changing. Same address, same chef, but all new ideas.

From May 2026, Balcon will be installed with whimsy on the roof of Galaries Lafayette Haussmann.

The idea was born from the encounter between the culinary audacity of Chef Julien Sebbag and the inspiration of the place: a breathtaking view like few others in Paris offer.

A name that seems obvious and has a touch of humor: a balcony open to the sky, and full spotlight on Parisian monuments.

Don’t be fooled – this name, a nod to the small zinc and wrought-iron balconies so typical of Paris – will reveals a restaurant on the grand rooftop terrace of Galeries Lafayette Paris Haussmann, and will house a brand-new concept. A declaration of love for the French bistro, the beloved dishes of the capitals brasseries, with a signature twist that only the check knows the secret to.

A Unifying and Good Mood Card

The initial intention stemmed from a loyal love for neighborhood bistros, typically Parisian.

“Balcon” offers seasonal cuisine that is generous and easy to understand, paying homage to French tradition while injecting a touch of bold modernity, dear to the chef’s identity: mimosa egg with black garlic, leeks vinaigrette with elderflower, or the traditional hanger steak with peppercorn sauce.

“Good Mood” & Summer Dishes

On the menu: a real freshness and acidity in dishes designed to be enjoyed on a rooftop all summer long. We love the use of blueberry with gravlax, Greek yogurt or tarragon.

True ti Julie’s love for vegetables, a beautiful place is given to seasonal produce: asparagus, peas, family ratatouille recipe, and heirloom tomatoes that celebrate summer.

Friendly, Canteen-Style Atmosphere with a View

All the love for comfort food can be found in pasta shells with truffle and parmesan or chocolate-pistachio profiteroles: to die for.

The decorative universe affectionately revisits the codes of the classic Parisian bistro with a more brutalist approach: raw materials, woven bistro chairs in burgundy or bottle green for the quintessence of the small Parisian neighborhood bar.

The spirit: Absolute freedom. People come here breakfast, lunch in the sunshine, a cocktail at dusk, or dinner under the stars, soothed by a soundtrack that evolves with the angle of the day.

Julien Sebbag: Free Spirit

Julien Sebbag is a self-taught chef.

Since his first foray into the kitchen almost ten years ago, he has championed a sincere, sensitive, and caring cuisine that shines through in each of his recipes. Yet, he wasn’t necessarily destined for it: it was by cooking for friends at home, and later defying his many travels, that he caught “the bug” and acquired the necessary maturity to open his first establishment in 2019.

From his first steps at Chez Oil to his latest ventures Micho, or Café Shin, he puts sharing and encounters at the heart of his cuisine.
