If you’ve spent enough time in Wales, chances are that you’ll know that West is best. With earthy and dramatic scenery, sleepy towns and clean, sandy beaches, Pembrokeshire is often a staycation hotspot.
During the May bank holiday, I was lucky enough to experience the mini heatwave that graced Wales during a trip to the West.
While I was there, I sampled The Cliff’s Restaurant at St Bride’s Spa Hotel, Saundersfoot. Set in the main dining room of the hotel, the eatery is nestled on a hill towering over the coastline.
As I was shown to my seat from the reception area of the hotel, I was absolutely speechless at the panoramic view in front of us.
Sat in the airy and bright dining room overlooking the Saundersfoot shores, I was fortunate enough to bag the corner table that felt like we were suspended above the ocean. A view from the top, indeed.
Of course, we took time perusing the wine menu. Luckily, for those not too familiar with the different varieties of grape, the staff are incredibly informed. Our French waiter was extremely knowledgeable for a tipple to compliment my main.
As we floated above the ocean in the dining room, we chose our dishes carefully. Feeling tired from the salt of the sea air, I opted for Atlantic Cod with black rice coupled with a side of seasonal vegetables.
The cod was fresh, tasting as though it had just jumped from the sea beneath me onto my plate. The black rice looked delectable, its texture making it the perfect partnership for the fish.
I eagerly nosed at other dishes that were waltzing past me to customers, taking it the sensory overload of edible temptation.
If I hadn’t been on a mission to cut down due to an imminent summer trip to St Tropez, I would have definitely chosen the burger which looked to-die-for and definitely had me wishing for cheat day.
For this reason I opted out of dessert, however the cheese board is famous at The Cliffs and when I return (and yes I will return), I will definitely be sampling both the burger and cheese board… then going on a 5 mile run.
Another visual spectacle were the Afternoon Tea towers being paraded out, laden with beautiful finger sandwiches and cakes. What better way to spend a sunny afternoon in Wales?
